Crispy Samosa, mouth-watering evening snack

Samosa is a north Indian evening snacks liked by majority of people around the globe. It is easily available in restaurants, street vendors or small refreshment food shops in India as well as in US, UK at some places. People really love this tempting snack and enjoy with tea. But when we prepare this snack at home, it is not of that grade as what is available in restaurants of food shops.

Here is a recipe of Samosa, you can try at home and make holiday more joyous with favourite snack.

Ingredients:

-       Maida: 2 cups
-       Potatoes: 4-5 medium sized boiled
-       Peas: 1 small bowl
-       Chopped Onion: 1 medium sized chopped
-       Ginger: small cube grated
-       Red chilli: ½ tea spoon or to taste
-       Dry mango powder (Amchur): 1 tea spoon
-       Salt: to taste
-       Garam masala(Spices): ½ tsp
-       Cumin seeds (Jeera): ¼ tsp
-       Carom seeds (ajwain): ¼ tsp
-       Chopped green chillies: to taste
-       Oil for fry



Procedure:

Preparation for filling in samosa:

-       Peel the boiled potatoes and mash it.
-       Wash the green peas and cut onion in small square pieces.
-       Heat the frying pan, add 1tsp oil. When oil is heated slightly, add cumin seeds, chopped green chillies, onion and grated ginger. And then add peas. Mix well and add small water for cooking peas. Cover the lid and keep cooking on slow heat for 5- 7 minutes till peas become tender. Note: peas should not become paste. 

-       When peas are cooked, add mashed potatoes, garam masala (Spices), Amchur (Dry mango powder), red chilli powder, salt and mix well so that all spices can be uniformly distributed in samosa stuffing.
Now samosa stuff is prepared.

Preparing Samosa:

Sieve the flour by adding salt, ajwain and then add one and half table spoon oil. Mix well and knead by pouring water slowly so that the dough is slightly tight but it should not have cracks. Knead it for sometimes and keep it in refrigerator for 15 minutes.

Now the dough is ready to make samosa.
Take roller. Make small around balls of dough. Roll each ball in round shape to 4-5 inches and cut it from centre so that you will get two pieces of half-moon shapes. Take piece one half-moon shaped and fold it like cone shape. Fill the potato stuffing and seal the upper edge. Likewise prepare all samosa.

After that heat the deep fry pan and add oil for frying. When oil is hot, slow down the heat of gas and from sides, pour the samosa. Fry on slow heat through changing the sides. Fry these samosa till crisp and golden brown. Drain onto absorbent paper. Serve hot with coriander and tamarind chutney(Sauce) or tomato sauce.
